  • 1/4 cup feta cheese crumbled
  • 1 tbsp olive oil
  • 1 slice sourdough bread toasted
  • 1/4 tsp chili flakes optional
  • 1 tbsp fresh dill chopped

  • 1/2 medium avocado sliced
  • hot sauce for drizzling

  • Heat a non-stick skillet over medium heat and add olive oil. Once hot, sprinkle crumbled feta cheese in a circular layer, creating a "nest" for the eggs.
  • Crack the eggs directly on top of the feta. Season the eggs with salt and pepper to taste.
  • Cover the skillet and cook for 2-3 minutes, or until the egg whites are set and the yolks are still runny.
  • Carefully slide the crispy feta fried eggs onto the toasted sourdough bread.
  • Garnish with chili flakes and fresh dill. Serve immediately with optional avocado slices and a drizzle of hot sauce.

Notes

For extra crispiness, cook the feta for an additional minute before adding the eggs. Don't overcrowd the pan; cook eggs in batches if necessary.
