  • 4 cups vegetable broth
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1/4 cup fresh herbs (e.g., parsley, thyme, rosemary), chopped
  • 1 lemon juiced and zested
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste

Instructions
 

Method 1: Stovetop

  • Rinse the dried beans thoroughly; optionally, soak them overnight to reduce cooking time.
  • Heat olive oil in a large pot over medium heat, then sauté chopped onion and minced garlic until softened.
  • Add rinsed beans and vegetable broth to the pot, bring to a boil, then reduce heat and simmer until beans are tender, typically 45-60 minutes.
  • Stir in fresh herbs, lemon juice, and lemon zest; season with salt and pepper to taste.

Method 2: Slow Cooker

  • Combine all ingredients (except fresh herbs, lemon juice, and zest) in a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours, or until beans are tender.
  • Stir in fresh herbs, lemon juice, and lemon zest during the last 30 minutes of cooking.

Method 3: Instant Pot

  • Add all ingredients (except fresh herbs, lemon juice, and zest) to the Instant Pot.
  • Cook on high pressure for 25-30 minutes, then allow a natural pressure release for 10-15 minutes.
  • Stir in fresh herbs, lemon juice, and lemon zest after the pressure has been released.

Notes

For extra flavor, consider adding a bay leaf or a parmesan rind during cooking. Adjust the amount of broth to your preferred consistency. These beans are excellent served with crusty bread or as a side dish.
