  • 1 lb chicken breast cut into bite-sized pieces
  • 4 cups broccoli florets
  • 3 packs ramen noodles discard seasoning packets
  • 4 cloves garlic minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp vegetable oil

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and minced garlic; set aside.
  • In a separate small bowl, combine cornstarch and water to create a slurry.
  • Heat vegetable oil in a large skillet or wok over medium-high heat, then add chicken and cook until browned and cooked through, about 5-7 minutes.
  • Add broccoli florets to the skillet and cook for 3-5 minutes, until tender-crisp.
  • Push chicken and broccoli to one side of the skillet, pour in the sauce mixture, and bring to a simmer.
  • Stir in the cornstarch slurry and cook for 1-2 minutes, until the sauce thickens.
  • Add cooked ramen noodles to the skillet and toss everything together until well coated.
  • Serve immediately and enjoy your quick meal.

Notes

For extra spice, add a pinch of red pepper flakes to the sauce. Feel free to substitute chicken with shrimp or tofu for a different variation. Be sure not to overcook the broccoli to maintain its crispness.
