Main Ingredients

  • 2 cups Cooked white rice (preferably leftover)
  • 2 Eggs
  • 1/2 cup Frozen peas and carrots
  • 2 Green onions, sliced for garnish
  • 1 tablespoon Sesame oil

For the Bang Bang Sauce

  • 1/4 cup Mayonnaise
  • 2 tablespoons Sweet chili sauce
  • 1 tablespoon Sriracha adjust to taste

For Seasoning

  • 2 tablespoons Soy sauce
  • 1/2 teaspoon White pepper

Preparation

  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce; set aside.
  • Beat the eggs in a separate small bowl.

Cooking Fried Rice

  • Heat sesame oil in a large skillet or wok over medium-high heat.
  • Add the beaten eggs and scramble them until fully cooked, then remove from the skillet and set aside.
  • Add the frozen peas and carrots to the skillet and cook for 2-3 minutes, or until slightly tender.
  • Add the cooked white rice to the skillet, breaking up any clumps.
  • Pour the Bang Bang sauce over the rice and vegetables, stirring to combine everything thoroughly.
  • Stir in the soy sauce and white pepper, then add the scrambled eggs back into the skillet and mix well.

Serving

  • Garnish with sliced green onions and serve hot.

Notes

Leftover rice works best for fried rice as it is drier and prevents the dish from becoming mushy. Adjust the amount of sriracha to your preferred spice level.
