  • 4 oz cooked chicken shredded or diced
  • 1/2 cup cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup feta cheese crumbled
  • 1 whole pita bread warmed, optional

For the Tzatziki Sauce

  • 1/2 cup plain Greek yogurt
  • 1/4 cup cucumber grated, squeezed dry
  • 1 tbsp fresh dill chopped
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions
 

Prepare the Tzatziki Sauce

  • In a small bowl, combine Greek yogurt, grated cucumber, fresh dill, lemon juice, minced garlic, salt, and pepper. Stir well and set aside.

Assemble the Bowl

  • In a larger bowl, combine the shredded or diced cooked chicken, diced cucumber, halved cherry tomatoes, and crumbled feta cheese.
  • Add the prepared tzatziki sauce to the chicken and vegetable mixture. Toss gently to combine all ingredients evenly.

Serve

  • Serve the chicken tzatziki mixture in a bowl, optionally with a warmed pita bread on the side for dipping.

Notes

For extra freshness, you can add some chopped fresh mint to the tzatziki sauce. If you don't have cooked chicken on hand, quickly grill or pan-fry a chicken breast for 5-7 minutes per side before shredding or dicing. Adjust the amount of garlic and lemon juice in the tzatziki to your personal preference. This recipe is also great for meal prepping; simply store the tzatziki sauce and chicken mixture separately and combine when ready to eat.
