  • 2 medium chicken breast
  • 1 large sweet potato diced
  • 1.5 cups broccoli florets
  • 1 tbsp olive oil

Maple Dijon Sauce

  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 0.5 tsp garlic powder

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Cut the chicken breast into 1-inch pieces and dice the sweet potato into similar-sized cubes.

Cooking

  • On the prepared baking sheet, toss the diced sweet potato and broccoli florets with olive oil, salt, and pepper. Roast for 10 minutes, or until tender.
  • While the vegetables are roasting, whisk together maple syrup, Dijon mustard, and garlic powder in a small bowl. In a separate pan, cook the chicken until lightly browned.
  • Add the cooked chicken to the pan with the roasted vegetables and pour the maple-Dijon sauce over everything. Toss to coat and cook for an additional 2-3 minutes.

Serving

  • Divide the chicken and vegetable mixture into bowls and serve immediately. Garnish with fresh parsley if desired.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the sauce. This recipe is also great with other vegetables like bell peppers or zucchini.
