  • 2 cups cooked chicken shredded
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup feta cheese crumbled
  • 0.25 cup Kalamata olives sliced
  • 2 tbsp fresh dill chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste

  • In a large pot or skillet, combine the orzo, chicken broth, and olive oil.
  • Bring to a boil, then reduce heat and simmer, stirring occasionally, until the orzo is cooked and most of the liquid is absorbed, about 7-8 minutes.
  • Stir in the shredded chicken, cherry tomatoes, diced cucumber, Kalamata olives, fresh dill, and lemon juice.
  • Cook for another 1-2 minutes, or until everything is heated through.
  • Remove from heat and stir in the crumbled feta cheese.
  • Season with salt and pepper to taste, and serve immediately.

Notes

For extra flavor, you can add a pinch of red pepper flakes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
