  • 2 tbsp butter
  • 0.5 cup onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 0.5 cup sour cream
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 8 oz egg noodles, cooked
  • salt to taste
  • black pepper to taste
  • fresh parsley, chopped for garnish

  • Brown the ground beef in a large skillet over medium-high heat, then drain any excess fat.
  • Add butter, chopped onion, and minced garlic to the skillet and cook until softened, about 2-3 minutes.
  • Stir in the sliced mushrooms and cook for another 2-3 minutes until they release their liquid.
  • Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  • Reduce heat to low, then stir in the sour cream, Dijon mustard, and Worcestershire sauce.
  • Season with salt and pepper to taste, and gently warm through without boiling.
  • Serve immediately over cooked egg noodles, garnished with fresh parsley if desired.

Notes

For a richer flavor, use full-fat sour cream. You can also add a splash of white wine with the beef broth for extra depth. This dish pairs well with a simple green salad for a complete meal.
